Yoghurt eggs with goats cheese and smoked salmon

High protein and delicious, will fill you up till lunch at least and is another that can slow cook while you go off and do something else.

Method

Heat some oil in a pan, crack the eggs into bowl and mix in the yoghurt with a fork. Place on hot oil and turn down low immediately. Tear up the smoked salmon and place over the eggs with the cheese. This will take about 7 mins to cook on low giving you time to do something else.

Ingredients

  • 2 organic free range eggs
  • 100gms smoked salmon
  • 25gms goats cheese crumbled
  • hand ful parsley for garnish
  • Tablespoon of goats yoghurt
