Gladiator Karen Harding's Breakfast

Breakfast is by far the most important meal of the day. It's exactly that, a break from your fast. It re-fuels your body from your sleep and starts your metabolism firing for the day. Think of it like putting some wood on dwindling embers!
So for breakfast I like to keep it fast and simple with great taste and balanced ingredients. These pancakes can be made the night before for extra convenience.

I first developed this recipe when I was doing body shaping competitions and was tired of no flavour healthy foods. I used to use 7 egg whites in place of what I have written here which is what I eat now. I also used to top with sugar free maple syrup although now I don't like to use any artificial sweeteners or processed foods.

Method

Spray a small non- stick skillet pan with cooking spray and put onto low/ medium heat.
Mix ingredients in a bowl with a spatula until well combined.
Pour and scrape with spatula the mixture into the small skillet pan and spread it to shape a flat disc.
After a minute loosen the edges with the spatula and then flip with an egg flip spatula. Careful not to over cook or the pancake can be tough.
Remove and serve with some blueberries and Agave syrup or honey.

  • 1/2 cup of organic oats
  • 2 eggs/ or 1 egg and 2 whites (free range only)
  • blueberries
  • agave or sugar syrup
