Pea, Bacon, Onion and Mint Salad

Method

Heat water in a deep pan and bring to the boil, add peas and cook for 4 minutes, rinse with warm water, drain and set aside.
Break whole mint leaves of stalk and thinly slice additional mint leaves.

Heat the olive oil in a large non-stick frying pan over a medium heat until hot and cook bacon till golden brown. Place on paper towel and set aside.
Cut spring onion into thin slices.
Assemble peas on a plate and arrange bacon, mint and onion on top.
Serve with Third Generation Gourmet Classic Salad Dressing.

  • 800g frozen peas
  • 1 bunch of mint, washed and drained
  • 8 Rashers of bacon
  • 3 spring onions, cleaned and washed
