Breakfast on the Go

Recipe by Daniel Churchill from Better Being

Method

Place water and oats in a saucepan (water should just cover oats) over medium to high heat and continue stirring until mixture becomes thick (if you are really short for time combine water and oats in a bowl and place in the microwave for 2 minutes). Take mixture off the heat and add to a bowl. Add yoghurt and continue to stir through. Once well mixed add berries, walnuts, honey, cinnamon and stir. Due to its thickness it is a great healthy meal to have even in the car on the way to work. It contains great carbohydrates to provide energy for the day, but also a great source of omega 3, antioxidants and the cinnamon even helps to speed up your metabolism. The oat mixture can be made in bulk and the berries and nuts already prepared just to save that extra time.

Ingredients

  • ½ cup of Oats
  • ½ Tablespoon of natural yoghurt (optional)
  • 3 Regular Strawberries sliced
  • 5 Raspberries (fresh or frozen)
  • Half a handful of walnuts chopped
  • Teaspoon of cinnamon
  • ¾ Tablespoon of honey
  • ½ cup of water
