ROCKET, RADICCIO GOATS CHEESE SALAD WITH FRIED PANCETTA & WALNUTS

Simple delicious and crowd pleasing

Method

Heat the olive oil in a large non-stick frying pan over a medium heat until hot. Fry Pancetta till golden brown, once cooked place on paper towel and set aside.
Slice goat’s cheese.
Divide rocket and radicchio amongst four places. Arrange 3 to 4 slices of goat’s cheese per plate.
Place two slices of pancetta on rocket and radicchio, garnish with walnuts and serve with Third Generation Gourmet Raspberry & Walnut dressing.

  • Extra Virgin Olive Oil
  • 8 slices of pancetta
  • 200g goat’s cheese
  • 125g walnuts
  • 1 bunch rocket, washed and drained well
  • 250g radicchio, washed and drained well
  • Third Generation Raspberry & Walnut dressing
