Corn Fritters

A delicious breakfast that everyone will enjoy. Corn is an excellent carbohydrate choice as it has a low GI.

This recipe is taken from the simply to good to be true book 3.

Method

In a large mixing bowl combine creamed corn, corn kernels, onion, stock powder, basil and parsley. In a small mixing bowl beat egg white for 30 seconds and add to corn mixture. Fold in flour until combined. In a non-stick frypan (at moderate hot temperature) coated with cooking spray place large spoonfuls of mixture, spread each fritter into a round shape. Cook 5 minutes or until browned, then turn, press down with spatula and cook a further 5 minutes. Makes 12 fritters.

  • 1 x 425g can creamed corn
  • 1 cup frozen corn kernels
  • ¼ cup onion finely diced
  • 2 teaspoons salt-reduced chicken-style stock powder (Massel®)
  • ¼ teaspoon dried basil
  • 1 tablespoon parsley chopped
  • 1 egg white
  • ½ cup self-raising flour
  • cooking spray
