Spinach & Coconut Prawn Curry

Method

Method
1 - heat the coconut oil in a large pan or wok.
add garlic, ginger and onion and cook for 2-3 mins on a low heat until soft not brown.
add the spices for 1-2 mins.

2 - add the tomatoes and continue to cook on a low heat.
add the coconut cream and curry powder and bring to boil.
mix in the spinach and lower the heat.

3 - add the prawns, sugar and a pinch of salt and cook for a further 2 mins over a high heat.

Serve with basmati rice and add lime wedges for taste.

Ingredients

  • 2 tbsp coconut oil
  • 2 red onions - finely chopped
  • 4 cloves garlic
  • 1 large knob ginger- finely chopped
  • 1 teaspoon - chilli powder
  • 1/2 tbs turmeric
  • 2 tbs ground cumin
  • 1 tbs ground coriander
  • 1 tin diced tomatoes - 400g
  • coconut cream - 400ml
  • 2 tbs - curry powder (mild or med)
  • 150g spinach, rinsed and stalks removed - finely shredded
  • 400f king prawns - raw
  • 1/2 tbs raw sugar
  • sea salt
