Runny Egg Summer Salad

During summer when you don't feel like a heavy dinner the best and most nutritious thing to do is just chop up whatever you have handy in your fridge and make a salad full of variety and colour. An egg on the top will add your protein.

Method

Chop your onion finely and rub a pinch of salt through it, add a tsp vinegar and leave to sit.
Chop your cucumber and celery and mix through a pinch of salt and leave to sit.
Chop your capsicum finely and slice your lettuce up into strips.
combine some oil and lemon juice
Soft boil your eggs and peel.
Add all ingredients together and serve the egg on top.

Ingredients

  • 1 x red capsicum
  • 1 x 200gm packet mung bean sprouts
  • 1 x 250gm packet walnuts
  • half a big cos lettuce1 x spanish onion
  • 2 eggs
  • 4 x stalks of celery
  • 1 x cucumber
  • salt
  • lemon juice
  • oil
  • vinegar
