Weight Loss Breakfast of Spinach tomato and egg breaky

This breakfast is simple super healthy and full of goodness.
Method
remove the green leaves from the stalks
chop the stalks finely
smash the garlic into pieces
slice the tomato into chunks
heat some oil in a pan, add the garlic and the stalks cook off till the stalks start to soften then add the tomatoes and cook for a few more minutes. Wash the spinach leaves and place in the pan while wet so there is some water to steam the leaves, crack your egg in the middle and let cook through till your preferred runny-ness
serve with a tsp of olive oil on the top
Ingredients
- 4 leaves and stalks of english spinach
- half a clove of garlic
- 1 tomato
- 1 tablespoon olive oil
- 1 egg
