Banana Town Tower

So many bananas I brought home a car full. What better thing to do than to make sweet delicious muffins for my friend Elizabeth's birthday. Completely screwed up the icing but it all worked out fine and everyone gave the right amount of 'mmmmm yummmmms'

Method

mash the bananas, mix the butter, sugar and bananas together beat the eggs and add in. Sift the flour with the baking powder and mix all together.

For the icing melt the chocolate together with the cream and make a nice white ganache. Allow to cool then Fold in the stiff egg whites. Place over the muffins.

Serve with a packet of fake bananas
