United Nations Curry with Quinoa & Amaranth

This quick-to-make dish is delicious and simple. It takes inspiration from every corner of the globe.

Method

In a deepish pan, that has a lid, fry spices in the coconut oil.

After 2 mins add 1 to 1.5 cups water (+ stock cube if you want to amp it up a bit), chopped veg, nuts if using, 1/3 cup quinoa & 1/3 cup amaranth. Cover & simmer 15 mins. Garnish with coriander.

If preferred you can use either amaranth or quinoa on its own – just make it 2/3 cup.

Ingredients

  • 1 dessertspoon coconut oil
  • fresh ginger 1 tsp
  • 1 tsp cumin
  • 1 tsp coriander
  • 3 curry leaves
  • 1 tsp mustard seeds
  • 1 tsp curry powder
  • 1 tablespoon fresh coriander root chopped finely
  • veg or chicken stock (optional)
  • 2 cups mixed fresh chopped veges - i like pumpkin, eggplant, cauliflower & edamame, or frozen green kidney beans work really well
  • 1 tablespoon raw nuts (optional)
  • 1/3 cup quinoa
  • 1/3 cup amaranth
  • 1 tablespoon shredded or fresh coconut
  • 1 tablespoon fresh coriander leaves chopped
