BREAKFAST CAKE

Nobody says no to cake right? Even fussy food-phobic 3 year olds.

This concoction is for anyone, anytime. Good afternoon pick-me-up or brekkie on the run. No nasties in it. If someone would like to tweak it to replace the flour with something healthier - & make it work! - I'd be tres grateful ;)

Method

Preheat oven to 180c. Grease & line a loaf tin.
Mix together the first 7 ingredients (everything up to & including chia seeds), let soak for at least 45 mins.
Sift flour into bowl and add husks caught in sifter to it. Add the soaked bran & fruit mixture, sugar & wheat germ. Combine well but don’t beat.
Spoon mixture into prepared tin, bake 45 mins or until cooked through. Turn out & cool on wire rack. When cool, slice & freeze.

Has lots of calcium, phosphorus, magnesium, vit E & B.
Lasts in freezer about 2 months.
You can pretty much add whatever you want – mashed banana, grated apple, raw cocoa powder etc.

Ingredients

  • 1 cup all-bran
  • 500ml skim milk (I use skim milk powder made up with warm/hot water. If using normal milk remember to warm it)
  • 1 cup sultanas
  • 1 cup dried cranberries
  • ½ cup dates, chopped
  • 1 cup dried peaches (or apricots, raisins, whatever) chopped
  • 1-2 tablespoons chia seeds (optional)
  • 1 ½ cups wholemeal self raising flour
  • ½ cup sugar, coconut sugar, or date puree
  • 2 tablespoons wheat germ
  • 1 tablespoon psyllium (optional)
  • anything else you fancy!
