Spinach eggs on sourdough

One of my most favourite way to eat eggs, however your eggs must be super fresh and your spinach has to be almost just picked to make it taste as it should.
Method
beat the eggs with the milk, chop spinach and wilt in a pan with just a bit of water. When the water has evaporated pour in the egg mix. Mix really slowly till the eggs cook and then serve on sourdough with parsley.
Ingredients
- 4 good organic free-range eggs
- bunch fresh spinach
- dash of milk
- fresh parsley
- sourdough bread
