Baked veg on a bed of lettuce

Sometimes the things you create from what is lurking in your fridge can be the best tasting. Unplanned, simple and nutritious, that is what cooking is for me.
Method
Chop the veg into large chunks, cover with oil and bake for 20 mins at 220ÂșC.
Slice up the lettuce and cucumber and cover with the lemon juice.
Serve together mixed with the fetta
Ingredients
- one large fennel
- one large potato
- one red capsicum
- oil
- cos lettuce
- one small cucumber
- juice of one organic lemon
- danish fetta
