two colours beet and lentil salad

If you haven't tried orange beets you need to. They are even better than the red variety, I can't explain why but they are very beautiful and rich and velvety. Just perfect with some lentils.

Method

boil lentils in salt water for 20 mins, don't over cook - this is very important or you salad will be mushy.

Chop all beets into 1/4's and wrap in foil. Bake in an oven on 200ÂșC for 40 mins. Allow to cool then remove from foil and peel and slice.

Make a dressing with all other ingredients - finely chop the garlic and mix through the lentils. Then place the beets gently and fold them through the salad.

Add more salt to taste.

Ingredients

  • 500gms lentils soaked in cold water for a few hours
  • bunch red beets
  • bunch yellow beets
  • handful parsley
  • lemon juice
  • olive oil
  • paprika
  • garlic clove
