Barley and Nettle Salad

On my last trip to Bondi organic markets I was sold this nettle, the guy let me taste it before I took it home. The flavour is really nutty like, almost like a tahini. I thought it would go really well with a simple barley salad at a BBQ.

This is super easy and so delicious.

Method

Cook the barley for 25 minutes in boiling water, you don't want to over cook it, it needs to have a slight crunch to it.
Drain and mix through the oil, salt, herbs and lemon juice.

Before serving slice the tomatoes in 1/4's and mix through. the longer you leave it to soak in the flavours the better.

Goes really well with a grass fed steak.

Ingredients

  • 500gms barley soaked for 4 hours
  • one bunch of nettle - leaves only
  • handful of chopped chives
  • pun net of cherry tomatoes
  • pinch salt
  • glug good olive oil
  • juice of one big lemon
