Sesame oatmeal coconut cookies

These cookies not only taste great but are good for you with highly nutritious ingredients. Sesame seeds do have quite a strong taste, so if you are not a fan, you will want to exclude them.
Method
1. Preheat oven to 180 degrees Celsius and line 2 baking sheets with baking paper.
2. Whisk the olive oil, sugar, eggs, vanilla essence and water till well mixed, then whisk in the wholemeal spelt flour, flaxseed meal and baking soda. Stir in the remaining ingredients with a large spoon.
3. Scoop a spoonful at a time onto the prepared baking tray and bake for 15-18 minutes. Allow to cool slightly before devouring. Once cooled, they will keep in an air-tight container for one to two weeks.
Note that the mixture is quite loose but they do hold together nicely once baked. Makes about 24 cookies.

- 1/4 cup olive oil
- 1/2 cup raw sugar
- 2 eggs
- 1 1/2 teaspoons vanilla essence
- 1/4 cup filtered water
- 1 cup wholemeal spelt flour
- 2 tablespoons flaxseed meal
- 1/2 teaspoon baking soda
- 2 1/4 cup oats
- 3/4 cup dessicated coconut
- 3 tablespoons sesame seeds
- 1/2 cup raisins
