Golden Beet and Millet Salad with Pistachios

The greedy guts in me at this whole salad to myself before the guest arrived! Can you imagine what a little piggy I am.... it was so delicious and by the time I had demolished most of it there was only an embarrassing amount left to serve to a dinner party. Happy for me though, was delicious.
Method
Preheat oven to 220ÂșC
wrap the beets in foil and cover with some salt and oil and bake for half an hour.
Remove cool and peel with your hands.
Cook the millet with the pistachios on low simmer for 20 mins then let sit off the heat with the lid on for 10 mins.
Slice the beets and mix in with the oil salt and parsley.
Maybe don't taste it until your guests arrive.
Ingredients
- 200gms millet
- big handful of pistachios
- handful of parsley
- good pinch salt
- good glug of top olive oil
- 3 small golden beets
- 3 small red beets
