Pan-Fried Barramundi with Grapefruit

When you go to the market looking for a certain fish don't be surprised if you come back with something different. Just ask what is the freshest and work with that. We didn't have any lemon so used grapefruit in this, super super happy result.

Method

Marinate the fish in all the ingredients for half an hour.
Pan fry skin side down on medium - high until you can lift it without it sticking the pan. Usually about 5 mins.
Flip it and then cook for another 2 minutes and let sit in the pan for about 4 mins. Serve with fresh beans

Ingredients

  • fresh pieces of barramundi
  • grapefruit zest about 1/4tsp per fillet
  • grapefruit juice freshly squeezed
  • handful of fresh dill
