Chocolate Mousse Sugar Free

When my husband was diagnosed with head cancer in June 2011, his diet changed drastically and he had to remove all sugar (sugar feeds cancer and tumours). I had already been on a gluten/sugar/dairy free diet so it was relatively easy to adjust meals for him.
One day he got a major craving for chocolate mouse and we nearly relented to just be able to give him some comfort, but first I thought I'd give this a go and VOILA! It worked! Its delicious! AND e a s y ~ enjoy!

Method

Put goats milk in blender and whip for 10mins.
Add coconut oil to low heat saucepan til melted, add half the coconut powder and remove from heat, stirring with a wooden spoon until smooth.
Add flesh from young coconut into blender and add the saucepan mix and blend.
Add date paste, stevia and the rest of the cocoa powder and blend. Taste to see if it needs more cocoa powder.
Blend until smooth - it gets very thick so food processor might be better if you have one. We dont have one so we stop blending, and use a spoon, and then blend again.
Pour into dessert cups, cover with glad wrap and refrigerate.
Serve after 30mins with blueberries or strawberries and mint leaf!

Ingredients

  • 2 cups goats milk blended for 10 mins
  • Flesh from one young coconut
  • 1 tbsp date paste
  • 1/2-1/3rds cup organic cocoa powder
  • 1 tbsp organic virgin coconut oil
  • 2 pinches stevia powder
  • Blueberries or strawberries
  • Organic coconut cream
