Baked sweet potato in duck fat

I roasted my first duck yesterday, to be honest I'm not entirely sure if I ever have to do that again, however the bi-product of roasting a duck is the enormous amount of duck fat that you are faced with. What better thing to do than roast more things in it.
Method
Chop your potato into large bite size pieces, roll in the duck fat and salt and roast in an oven on 180ÂșC for half an hour.
Serve with black sesame seeds and parsley
Ingredients
- 1 x large sweet potato
- 100 mls duck fat
- good pinch sea salt
- fresh parsley to serve
- black sesame seeds to serve
