Smokey Marinated Mulloway

We ordered snapper but this grand piece of Mulloway came back from the markets instead, it was so huge and fresh. This was a filling used for chapatis. Was second frying hence the pic looking a bit mushy.

Method

Marinate the fish in all of the ingredients overnight.
Fry in a bit of duck fat or olive oil.
Serve on chapatis with fresh red cabbage.

Ingredients

  • 1kg fresh Mulloway
  • juice of one lemon
  • pinch sea salt
  • tblsp of smokey paprika
  • 3 large garlic cloves finely chopped
  • stalks of one coriander bunch finely chopped
  • olive oil or duck fat for frying
