Mulloway Tostadas

This is actually the best food Mexico has to offer, just an easy fried tortilla base with anything you wish on the top.
Method
Marinate the fish in the paprika, lemon, garlic and coriander stalks for 30 mins.
Make your little tostadas by adding water to your flour and then making into little balls which you flatten with your hands. Don't worry if they are not perfect.
Fry your mulloway to your own taste, it is an amazing fish when fresh and doesn't take long so don't over do it.
Serve on your tortilla with green salsa and coriander leaves and sliced orange rind.
Ingredients
- fresh mulloway cut into strips
- smokey paprika
- juice of one lemon
- garlic finely chopped
- corn flour, either PAN or MASECA
- green salsa
- slices of orange rind
- coriander fresh, leaves an stalks chopped separately
- orange rind
