Red cabbage with goats cheese and dill

This salad will be perfect with my roast duck later tonight. I don't usually wilt the cabbage but I had some deglazed pan juices in orange juice so i just threw the garlic and cabbage in for a minute. Turned out lovely.

Method

Heat a pan with a touch of oil and add in a bit of the orange juice and garlic, cook till the garlic starts to soften then add in the cabbage and cook for 2 mins.

Sprinkle with the goats cheese and dill and then pour over the remaining orange juice just before you serve.

Ingredients

  • 1/2 red cabbage roughly chopped
  • 3 big garlic cloves roughly chopped
  • juice of 1/2 orange
  • handful fresh dill
  • 100gms good goats cheese
