Organic Chicken Soup with Beetroot and grains

Chicken soup has never been easier, there is no need to do anything to the bird except throw it in whole. The beetroot makes the soup become a rich red colour. This will fight any winter bugs and will last for days.
Method
Use a massive pot, fry the onion with the sliced turmeric (no need to peel) place the chicken in the pot. Add water till its covered.
allow to simmer for about 20 mins then add in the vegies
simmer for another hour
then place in the soup mix and cook for a further 30-40 mins on low
you'll know its done when the chicken just literally starts to fall apart.
I take all of the bones and fat out at this point but you really don't have to.
Serve in bowls with yoghurt and fresh parsley
Ingredients
- Spanish onion
- whole knob garlic
- 1 piece of fresh turmeric sliced
- whole organic chicken
- two large beetroot
- soup mix of millet, quinoa, red lentils, mung beans, pearl barley, split peas, adzuki beans and red and white kidney beans
- 1 x swede peeled and chopped roughly
- 3 carrots
- hand ful fresh parsley
- sheeps milk yoghurt
