Vegetable noodle soup

This is a perfect soup to make when you have just a few things lift in your fridge that need to be cooked. If you have a few essential Asian ingredients and fresh herbs you can make anything.

Method

In a deep pan fry up all the veg in a little bit of oil till they all soften and the mushrooms take over the colour. Chop all of the fresh herbs and mix through while its still warm so they just wilt but don't cook.

In a pot boil 250mls of water and add in all of the sauces, cook the noodles for 3 minutes and then serve in bowls with the veg.

Ingredients

  • 1 leek
  • 5 cloves organic garlic
  • few handfuls of almonds
  • green capsicum
  • few big flat mushrooms
  • handful fresh flat leaf parsley
  • handful fresh dill
  • handful fresh thai basil
  • for the soup base
  • buckwheat udon noodles
  • 50mls light soy
  • 50 mls dark soy
  • 50 mls fish sauce
  • good dash of sesame oil
