Baked veg with egg and fresh broad beans

The purple sweet potato just oozes natural sugars and mixed with the beans and eggs, makes it another healthy low GI breakfast that should set you up till at least morning tea!

Method

Night before
Place sliced sweet potato in oven with the tomatoes and a dash of oil and pinch of salt. Bake at 180ÂșC for half an hour. Meanwhile peel the broad beans from their pods, blanch in boiling water for a few minutes then run under cold water and remove the second skin. Place in the oven for the last 10 mins with the pots.

The next day, place a few pieces of veg in a pan with some hot oil and fry your egg in the middle.

  • pieces of purple sweet potato cut into thick slices
  • cherry tomatoes
  • handful of fresh parsley
  • good fresh organic free range egg
  • fresh broad beans
