Asian Chicken & Soba Noodle Soup
This is an easy stand by quick and healthy dinner
Method
In a big pot bring chicken stock to the boil. Add roughly chopped garlic, lemongrass, chilli and ginger and 2 of the shallots. Add Xiao Xing wine and soy and add more to taste if required. Simmer this for about 10-15 minutes but if you don't have time I have simmered for as little as 5 minutes.
Once flavours have infused strain liquid and discard vegetables.
Add chicken to stock and poach.
Then add noodles, broccoli and bok choy.
When chicken, noodles and vegetables are cooked serve with fresh coriander and remaining shallots
Ingredients
- 1 x free range chicken fillet, sliced into bite size pieces
- 2 x garlic cloves
- 1 x lemongrass stalk
- 1 x red chilli
- 1 x 3cm piece ginger
- 4 x shallots
- 1/2 cup coriander
- 1 x bok choy
- 1/2 head broccoli
- 1/2 packet soba noodles
- 2 x litres chicken stock
- 2 x tablespoons Xiao Xing wine
- 1 x tablespoon Soy Sauce
