Friday Night Chicken Sandwiches and Chips
The perfect Friday night dinner whilst the hubby watches the footy!
Method
Heat oven to 200 degrees.
Combine coriander, chilli, garlic and olive oil and marinade chicken in this mixture for a long as you have.
Wash potatoes and cut into chips. Place on baking try and drizzle with olive oil and season.
Cook for 20 minutes and turn and cook until crispy on the outside and cooked on the inside.
While the potatoes are on heat some oil and cook onions for 15 minutes, adding brown sugar to sweeten and caramelise.
Grill chicken fillets and slice.
Cut bread to thickness desired and toast.
Assemble by placing rocket, sliced chicken, onions, tomato and avocado onto bread.
Serve with hot chips out of oven.

- 1 x chicken thigh fillet per person
- 1/4 cup chopped coriander
- 1/2 red chilli chopped
- 1 x garlic clove chopped
- 1/4 cup olive oil
- 1 x tomato sliced
- 1 x avocado sliced
- Rocket
- 2 x brown onions sliced
- 1 teaspoon brown sugar
- 2 x dirty brown potatoes
