Banana Ricotta Cakes

These are a healthy cheesecake alternative and super delicious!

Method

Heat oven to 160 degrees.
Line muffin tin with baking paper.
Mix together eggs, ricotta, milk powder, flour, vanilla and honey.
Then add banana's.
Spoon mixture evenly into the cases.
Bake for 25 minutes or so until they have set.
Remove from oven and allow to cool.
Serve with fresh berries and a dust of icing sugar.

Ingredients

  • 3 x bananas mashed
  • 500g ricotta
  • 2 x eggs beaten
  • 1/3 cup milk powder
  • 2 tablespoons self raising flower
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
