Red rice and almond breakfast

Still on my mission to explore healthy breakfasts and to move away from cereals. This one is a cracker, the beetroot flavour comes out and cooking the almonds makes them so soft and lovely.

Method

Wash rice and place in a small pot with double the amount of water and the beets and almonds. Bring to rapid boil for 10 mins then place the lid on and leave to sit for another 10. It should be ready but if not add a bit more water and do the same again for 2 mins and 2 mins.

Serve with the yoghurt.

Ingredients

  • serves one
  • 1/3 cup brown rice
  • 1/2 small beetroot peeled and roughly chopped
  • handful almonds
  • dollop good organic sheeps milk yoghurt
