Smokey Organic Chicken Soup

This is fairly uncomplicated and pretty quick in chicken soup terms. And probably the best F(*&k'n chicken soup you will ever eat.....EVER!

Method

Remove the skin from the chicken and set aside.
Chop onion roughly and fry in the oil for a few minutes.
Add in the chicken skin and let it fry on both sides till just turning crips, this will let the fat run out of it. Remove the skin and discard.
Add in all the spices and fry in the chicken fat until the fat runs clear of the spices. Add in the red wine to deglase the pot. Now place the chicken in and brown on all sides before you add enough water to cover.
Reduce to a low simmer for 45mins.
Add in the dry mung beans and cook for a further 45 mins.
Serve with some fresh parsley.

Ingredients

  • 1 whole organic chicken
  • large brown onion
  • 2 tsp smokey paprika
  • 1 tsp sweet paprika
  • 1tsp black pepper
  • 1/2 tsp garam masala
  • 1 tsp cumin seeds
  • 1 tsp oil
  • 100mls red wine
  • 250gms mung beans
  • water
  • good pinch of good salt
  • fresh parsley
