Creamy Chocolate Cake

This is the first chocolate cake that I have made without having to use a recipe. It worked really well and its all brown sugar and cream with no butter, but loads of Swiss chocolate.

Method

Melt the chocolate and the cream together over some boiling water in a bowl. Separate the eggs and whisk the whites with the salt until soft peaks form. Mix the yolks with the gin and add into the chocolate mix stirring continuously.

Sift the flour and mix with the sugar and baking powder. Mix through the chocolate mixture really well then fold in the egg whites. Pour into a greased cake tin and bake for 35mins at 180ÂșC.

Ingredients

  • 400gms good Swiss milk chocolate
  • 100mls thick pouring cream
  • 100gms brown sugar
  • 3 good eggs separated
  • dash of gin
  • pinch of salt
  • 100gms plain flour
  • tsp baking powder
