Quinoa and lentil salad with feta

I used plain quinoa but I think the red or black would be great for some extra colour.

Method

In a pot bring stock and quinoa to the boil. Pop the lid on and simmer of 15mins. Then allow to cool.
In a large bowl put in all the other ingredients and mix together. When the quinoa has cooled, put this in the bowl with other ingredients. And season with pepper.

Ingredients

  • 1 cup of Quinoa
  • 2 cups Vegie stock
  • 1x 400g tin lentils drained
  • 3 spring onions finely chopped
  • 1 small green capsicum diced
  • 125g feta diced
  • 2 teaspoons sesame oil
  • 1 teaspoon soya sauce
  • 1 teaspoon dried chili
  • a small handful fresh coriander
  • pepper

quinoa my favourite and with feta this makes it double happiness
