Potato Pie

Potato Pie

This super simple pie goes great with a juicy, juicy steak.

And it stays for days, so be sure to cook one up on a sunday and nibble all week long!

Method

1. Cut the potatoes, leek and onion into large chunks
2. Crush the garlic and in a bowl toss all the veggies and herbs with a few good drops of oil
3. Throw into a baking tray and cook in the oven on high until the potatoes are crunchy on the outside but soft on the inside
4. Put the veggies aside to cool a little while we prepare the pie
5. Oil up a round cake tin and make the pie base with one sheet of the puff pastry
6. Crush the veggies until there's a chunky; but not mashed; filling, then place in the pie base
7. Cover the pie with the other sheet of pastry, seal and glaze with a beaten egg
8. Cook until the puff pastry has 'puffed'

Ingredients

  • 2 sheets of Puff Pastry
  • 1kg of potatoes
  • 1 leek
  • 1 brown onion
  • 4 garlic cloves
  • Fresh Rosemary
  • Dash of Mixed Herbs
  • Dash of Paprika
  • Dash of Oregano
  • 1 egg
