Cheats Dahl

This is a great mid week dish...I do a little cheat and use tin lentils... And you can add any vegies you like...

Method

In a large pot, on a med heat, put a good amount of olive oil, then add onion,carrot and celery. When the onion has soften add ginger and garlic and spices. Then add zuchinni, potatoes, pumpkin and vegie stock and turn the heat up and bring to the boil.
Then put half the lentils in a food processor and blist then into a rough paste. Add all the lentils and chickpeas. Keep stirring as the lentils may stick to the bottom of the pot. If you need to add some more stock if potatoes are not soft.
Serve with a wedge of lemon, some corriander, a good spoon full of yogurt and some chilli on top.

  • Olive oil
  • 1 Onion diced
  • 1 Carrots diced
  • 2 sticks celery diced
  • 1 knob ginger grated
  • 2 cloves garlic diced
  • 1 zuchinni choppped
  • 1 cup pumkin chopped
  • 2 meduim size potatoes diced
  • 1 teaspoon Gram marsla
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 400g tin Lentils drained
  • 1 400g tin chickpeas drained
  • 500mls vegie stock
  • a handful coriander
  • 1 lemon
  • 1 small tub greek yogurt
  • 1 small red chilli
