Brown Rice and Chia Egg Breakfast

I'm attempting to get up early and cook breakfast this week. This is Tuesday's version of GO HEALTH. It is really fast, super healthy, has the right amount of proteins ans complex carbs and the parsley is full of vitamin C.
Method
Soak the rice overnight to shorten cooking time in the morning.
Rinse and cover the rice with twice as much water in the morning and put on high with the lid off. Cook for about 5 mins with the lid off and then throw your chia seeds and place the lid tightly on for another 5 mins on low, then turn the stove off and leave for another 5 - 10 mins while you go and do something else.
When rice is done, chop up your parsley and mix in the egg and fry quickly with the rice.

- 1/4 cup rice
- 1 organic free range egg
- tablespoon chia seeds
- handful of parsley
