Baked Rhubarb with Cream

The trick to rhubarb is that you need to make it fresh or starts to get bitter. This actually has too much sugar in it for me but its yummy all the same.

Method

clean and slice the rhubarb into 3cm pieces, cover with the sugar and water and bake for 30 mins on 175ÂșC
let cool outside the oven for an hour
when ready pour over some cream and serve with mint

Ingredients

  • big bunch beetroot - about 400gms
  • 125gms sugar
  • 50mls water
  • pouring cream
