Grapefruit Cake!!!

Something a bit Different, perfect for afternoon tea

Method

Preheat the oven to 180 degrees C. Butter the base of a deep 20cm round cake pan. Cream the butter, sugar, lemon rind & vanilla bean together using an electric mixer until light and fluffy. Add the eggs and beat well. Sift the flour and baking powder into the mixing bowl add to egg and butter mix with the lemon juice and milk. Beat on low speed until just combined and smooth.

Pour the mixture into prepared pan and bake for 50 minutes until a skewer inserted into the centre of the cake comes out clean.
Cool in pan for 5 minutes then turn onto a wire rack to cool.

To make the glaze put juice and sugar into saucepan, bring to a simmer or until the sugar has dissolved then set aside to put on the cake after it cools.

Serve with segmented grapefruit and and smother in glaze!

Ingredients

  • 150g unsalted butter
  • 1 cup caster sugar
  • 2 large grapefruits zest
  • 1 vanilla been (scrape out the seeds)
  • 3 eggs
  • 1 cups plain
  • 1 cup self raising flour
  • 1 teaspoons baking powder
  • 150ml grapefruit juice
  • ½ cups milk
  • ½ cup youghurt
  • Glaze:
  • 2 table spoons of sugar
  • 100 ml of grapefruit juice
  • *segmented grapefruit for presentation
