Orange coconut sago with passionfriut

This is a nice summer pudding!
Method
Serves 6
1. Place sago in large saucepan with 2 cups cold water. Set aside to soak for 30 mins.
2. Stain sago and return to your saucepan. Add coconut cream and bring to the boil. Cook, Stirring, for 15 mins or until sago is translucent and tender. Stir in orange rind and 1/2 cup of the sugar. Set aside for 15mins to cool.
3.Meanwhile combine remaining sugar and passionfruit in a bowl.
4. Spoon sago into a serving bowl or glasses. Top with Passsionfruit mixture.

- 1 Cup Sago,rinsed
- 2 cups cold water
- 400g can coconut cream
- 1 teaspoon finely grated orange rind
- 2/3 caster sugar
- 4 large passionfriut, halved
