Coca de Patata

Coca de patata is a typical sweet of Mallorca, especially popular at parties Valldemosa in the oven Can Molinas.
Method
Place the unpeeled potatoes to cook in saucepan until soft. Peel it with a fork and mash them.
Mix the flour (sifted with the yeast) and mashed potatoes. Then add the iconfectioner's sugar mix until well combined .
Add lard (melted in the milk) little by little until getting a soft dough. Add the egg and knead.The dough should be moist, but well processed.
Place the dough on the work surface and knead about 5 minutes.
Place the dough in an oiled bowl and turn so that the surface is coated.
Cover with plastic wrap and let it rise in a warm place for 2 hours or until double in volume
Put the dough back onto the lightly floured work surface and in 8 equal parts (we ommited this and made one large loaf).
Place the balls and with a sufficient distance from each other on a greased baking sheet.
Cover with oiled plastic wrap and let it rise for about 30 minutes or until the volume has doubled.
Preheat the oven to 180 ° C.
Bake for 50 minutes (or 20 minutes if you make small buns) or until golden brown.
Cool down completely and dust with confectioner's sugar.
