Baked veg with haloumi omelet

Had some left over baked veg and a packet of haloumi and eggs. Breakfast done.
Method
Slice up the veg and the haloumi, heat some oil in a pan and place the veg, mix the eggs and milk and pour over the top.
Scatter cheese bits and cook till the bottom is done but still runny on top, then remove and place under a grill for a few minutes.
Ingredients
- Any left over baked veg from the night before.
- Eggs as many as you like
- dash of milk
- pinch salt
- slice of haloumi
