Coconut Rice Pudding Breakfast with poached pears and cinnamon

This is the same recipe for the coconut rice just for breakfast with poached pears and cinnamon. It feels like a Christmas Day treat.

Method

Wash the rice, cover with water, add the cinnamon and spices and rapid boil for about 15 mins till most of the water has absorbed. Remove the cardamon pods and cinnamon and add the coconut milk and suger. Cover and simmer for a further 15 mins. Add in the coconut cream and simmer for 5 mins.

Serve with poached pears and cinnamon.

  • 1 cup white rice
  • cinnamon quill
  • 1/4 cup sugar
  • 4 cardamon pods
  • tsp garam masala
  • 250mls coconut milk
  • 100mls coconut cream
  • banana
  • blood limes

This is the breakfast of kings but I've always struggled to replicate that 'Thai' dessert taste. Thanks for the tip!
