Dairy-free omelete and chapatti breakfast

This might sound ridiculous to make your own chapattis before work, but I've seen people in India whip these up in less than 3 mins, and anything that over 100million people can do, we can do too. We didn't have any bread this morning and I have a glut of bakers flour so I transported myself back to Rishikesh and got doughy with it. The whole thing omelet and all takes about 12 mins. The freshness of these puffy chapattis are to die for and what a treat first thing in the morning.!

Method

For the chapattis put the flour and cumin seeds into a flat bowl and keep adding water bit by bit and work with your fingers until you have a nice dough that is almost sticky. Keep adding a bit of flour and knead for about 30 seconds, if you use good flour this will be really easy, try to have your flour as wet as possible but able to knead, it makes for light and fluffy chapattis. Let rest while you prepare the eggs.

Heat oil in a frypan and throw in the chopped mushrooms. Whisk the eggs and when the mushrooms are don add the egg mix.

Meanwhile pull off 1/4 of your dough mix and roll into a ball into you hand. Place on a bench with flour and roll with a rolling pin and flip a few times. Heat a tiny bit of oil in a flat pan and place the chapatti into the pan. Flip with your fingers when you can, you will know when its ready because it will let you flip it easily, repeat and make 4.

While flipping your chapattis you will need to also flip your omelete. Serve together with some avocado strips.

  • For Chapatti
  • half a cup of bakers flour
  • water
  • tsp cumin seeds
  • For omelete
  • 4 eggs
  • 6 button mushrooms
  • dash good olive oil
  • salt
