Chicken Pancetta Olive and Bocconcini Pasta

I have a glut of pancetta and bocconcini in my fridge, this was tonights pasta brought to you by produce gluts. Lucky it is winter is all I can say, this is for a cold night.
Method
Boil some water in a big pot. Fry the chopped onion, garlic, pancetta and olives in a pan for a few minutes, when browned add in the chicken. Meanwhile boil the pasta.
Cook the chicken until brown and then place a lid over it and turn right down. When pasta is done drain and place in the pot with the chicken, add the cheese pieces and the parsley. Mix over high heat for 2 mins and serve.

- Serves 2
- 2 x organic chicken thighs
- half an inch of pancetta sliced
- two handfuls of flat leaf parsley
- 8 green olives seeded and sliced
- 5 small bocconcini balls sliced
- 1 x onion
- 3 x garlic cloves
- 250gms penne
- dash of salt
