Roast pumpkin bocconcini and rocket salad

All these warm roasts and slow cooked meals make me crave a salad, this is a nice warm winter salad with lots of rocket for heart health.

Method

Roast the pumpkin in a baking tray with the salt and garlic and oil for 40 mins at 200ÂșC.
Soak and wash the rocket. Make a dressing with vinegar and lemon juice. Toss everything together and serve while the pumpkin is still warm.

Ingredients

  • 1/2 jap pumpkin peeled and cut into small pieces
  • 5 garlic cloves peeled
  • salt
  • dash good olive oil
  • rocket
  • bocconcini balls
  • juice of half a lemon
  • glug good red wine vinegar
