Beef and pork and polenta and sweet potato balls.

Method

In a large pot of boiling water, place the scored tomatoes for a few seconds each and then remove and peel straight away.
Place the peeled tomatoes into a baking tray with the garlic and onion and bake for 20 mins. Remove and place back on the stove with a bit of water and the thyme. Leave simmering.

Peel and chop the sweet potato and bake till really soft, add into a big bowl with the meats, parmesan and parsley. Make into small round balls and bake in some oil on a baking tray at 220ÂșC until nice and firm.

Serve with the hot tomato sauce.

  • 1kg beef mince
  • 500gms pork mince
  • 250gms polenta
  • 1 big sweet potato
  • 2kgs of tomatoes
  • 4 garlic cloves
  • 1 onion
  • parsley
  • handful thyme leaves
  • 250gms parmesan grated
