Massa Sovada

Portuguese sweet bread, Massa Sovada or simply Massa, Pao Doce.
Method
In a large bowl, add the yeast, flour, vanilla extract, mint, orange and lemon zest. Add the eggs one by one mixing well after each add.
In a small saucepan, combine the milk with the sugar and the butter, cook until the butter is melted and the sugar dissolved (don't let it boil).
Pour (little by little) the milk mixture into the flour mixture, mixing until getting a soft dough.
In a working surface knead the dough until getting a soft (but not sticky) dough.
Place in a bowl, cover with kitchen foil and let it rise in a warm place for 2 hours or until double size.
Punch down the dough and shape the loaf (in our case we prefered a round shape).
Cover and let it rise for 2 hours.
Brush with the eggwash.
Pre-heat the oven at 180°C. Bake for 50 minutes or until done.

- •Flour, 540 gr
- •Sugar, 200 gr
- •Butter, 80 gr
- •Salt, 1/2 tbs
- •Vanilla extract, 2 tbs
- •Mint extract, 1/2 tsp
- •Orange zest (grated), 1 tsp
- •Lemon zest (grated), tsp
- •Egg yolks, 4
- •Milk (lukewarm), 200 ml
- •Egg yolk beaten with 1 tbs milk, (eggwash)
