Quesadillas fritas

These need to be eaten as soon as they are fried so its good to make them for friends while they are sitting around your kitchen drinking mescal and can help you roast the peppers.
Method
Place the capsicum over your gas hob on the naked flame and let the skin burn a bit, keep turning to cover all sides. Remove from heat and place in a plastic bag. When cooled shake in the plastic bag for a bit and then remove and peel the skin off. Cut open and remove the seeds and slice in strips.
Heat some oil in a pan and fry the capsicum strips and onions with some pepper and salt for a few minutes.
Mix the Maseca with the flour and some salt and add water till you have a nice soft dough. Make nice round tortillas using a tortilla press.
Fill each tortilla with the petals of the zuchini flowers and some capsicum mix and cheese. Fold over and make sure it has closed.
Gently shallow fry in hot oil, keep covering the quesadillas with oil while you fry. Serve over lettuce leaves and guacamole.

- 500gms maseca
- 250gms mozarella or Oaxacan string if you can get it
- 2 Tbs. wheat flour
- salt
- one green capsicum or poblano pepper
- 10 zucchini flowers
- 1/2 a white onion finely chopped
- coriander leaves
- 2 cups corn oil
