Chicken & Sage Pot Pies

We made our first pies last night. We called them "His and Her's Pot Pies". I put a heart necklace on mine and he added a bow tie and buttons. These were really easy to make on a cold winter night and super delicious!

Method

Pre heat oven to 180 degrees
Toss the chicken in the flour inside a plastic bag
In a non stick pan, brown off the chicken in half of the butter
Remove chicken
Add the rest of the butter into the pan and add prosciutto, mushrooms and onion and cook until onion is soft
Add the chopped sage leaves
add the chicken back into the pan and slowly pour in chicken stock while stirring
Add enough stock to make a thick creamy sauce
Throw in a dash of milk
Let the mixture simmer for 10 mins
Then fill up your pots with the chicken mixture
cut out the pastry tops and lay them over the pots
Use a sharp knife to pierce a couple of holes to let steam out
make shapes with the remaining pastry and put them ontop (bow ties etc - so you remember which one you made)
Cook for 10-15mins until pastry is golden

Serve with mushy peas

Ingredients

  • 500g chicken thighs, roughly chopped
  • ½ cup plain flour
  • 70g butter
  • 6 slices prosciutto
  • 1 onion finely chopped
  • handful of field mushrooms
  • handful of swiss brown mushrooms
  • 1 cup chicken stock
  • sage leaves
  • sea salt & white pepper
  • dash of milk
  • 2-3 sheets ready-rolled butter puff pastry
  • 1 egg
